  • Hoosier State Deer Jerky

    Wild Game Recipe: Hoosier State Deer Jerky

    • 8 to 10 lb. deer steaks
    • 2 T. onion powder (heaping)
    • 1 lg. bottle soy sauce
    • 1 T. garlic powder
    • 2 T. Worcestershire sauce
    • 1 T. mustard powder
    • 2 T. hickory-smoked salt (heaping)
    1. Cut deer steaks into long, thin strips.
    2. Mix remaining ingredients in a marinating dish.
    3. Add the strips of deer steak and refrigerate overnight, turning the dish at intervals.
    4. Remove deer strips from marinade and place directly onto the oven rack.
    5. Put aluminum foil on the bottom of the oven to catch drippings.
    6. Bake at 150 degrees for 4 to 6 hours with the oven door cracked.
    7. Bake 4 hours for moist jerky and 6 hours for dry jerky.

  • How-to Make Oven-Cured Venison Jerky

    Learn how to make venison jerky by following these simple steps. You can use this with deer, elk, and other types of wild game as well!

    Wild Game Recipe: Oven-Cured Venison Jerky

    • 1 lb. venison meat
    • 1 tsp. garlic powder
    • 2 T. Morton tenderquick salt
    • 2 T. brown sugar
    • ¼ tsp. black pepper
    • ¼ tsp. dried red pepper
    • Liquid smoke
    1. Slice meat into long, thin ¼ -inch strips, working with the grain, not across.
    2. For every pound of meat, prepare a mixture of the above ingredients. (May double, triple, etc.)
    3. In a glass or stainless steel container, place strips in layers, one strip thick.
    4. Sprinkle each layer with liquid smoke and then 2 to 3 tablespoons of the salt mixture.
    5. Cover and refrigerate meat 24 to 48 hours.
    6. Drain and lay each meat strip separately on a cookie sheet.
    7. Place in a 150-degree oven with the door open for good air circulation for 10 to 12 hours, or until thoroughly dry.
    8. Seal in tight, plastic bags. This Venison Jerky Keeps or freezes well.

    There are a number of fish taco recipes available on-line, ranging from traditional Mexican fish tacos to tex-mex style fish tacos.

    Only your imagination limits how many variations of fish tacos you can make, that is why fish tacos are so enjoyable to cook and eat.

    For the Fish Taco Seasoning:

    • 1 tablespoon of chili powder
    • 1/4 teaspoon of garlic powder
    • 1/4 teaspoon of onion powder
    • 1/4 teaspoon dried oregano
    • 1/2 teaspoon paprika
    • 2 teaspoons ground cumin
    • 1 teaspoon sea salt
    • 1 teaspoon black pepper

    The Fish:

    • 1 pound firm white fish
    • 2 tablespoons of good quality extra virgin cooking oil
    • 2 tablespoons of lime juice
    • Combine fish (oil, lime juice, and one-half of the seasoning mix in a plastic bag and marinate it in the refrigerator for about 30 minutes.)
    • Fry or grill the fish until it flakes easily

    For the Fish Taco Sauce:

    • 1/2 cup sour cream
    • 1/2 cup mayonnaise
    • 1/4 cup chopped fresh cilantro
    • Half taco seasoning (see above)
    1. Mix sour cream, mayonnaise, cilantro, and one-half of the seasoning mix.
    2. Fill tortillas with fish, cabbage, chopped tomato, chopped avocado, cheddar cheese, lime juice and top it with fish sauce.
    3. You could also serve with homemade salsa.

    *Note: You can opt to use – Ortega Seasoning Mix, Fish Taco Seasoning, 1 Ounce Package – If you wish.

    • Ingredients
    • 1 egg (lightly beaten)
    • 1/2 cup ketchup
    • 1 tablespoon prepared horseradish
    • 2 cups shredded peeled apples
    • 2 cups unseasoned stuffing cubes
    • 1/4 cup finely chopped onion
    • 1 tablespoon ground mustard
    • 2 pounds ground venison
    1. Instructions
    2. In a large bowl, combine the first seven ingredients.
    3. Crumble venison over mixture and mix well. Pat into an ungreased 9-in. x 5-in. loaf pan.
    4. Bake, uncovered, at 350° for 60-70 minutes or until no pink remains and a thermometer reads 160°.
