  • Hoosier State Deer Jerky

    Wild Game Recipe: Hoosier State Deer Jerky

    • 8 to 10 lb. deer steaks
    • 2 T. onion powder (heaping)
    • 1 lg. bottle soy sauce
    • 1 T. garlic powder
    • 2 T. Worcestershire sauce
    • 1 T. mustard powder
    • 2 T. hickory-smoked salt (heaping)
    1. Cut deer steaks into long, thin strips.
    2. Mix remaining ingredients in a marinating dish.
    3. Add the strips of deer steak and refrigerate overnight, turning the dish at intervals.
    4. Remove deer strips from marinade and place directly onto the oven rack.
    5. Put aluminum foil on the bottom of the oven to catch drippings.
    6. Bake at 150 degrees for 4 to 6 hours with the oven door cracked.
    7. Bake 4 hours for moist jerky and 6 hours for dry jerky.

    20 Minute Venison Hamburger Skillet Stew

    • 1/4 lb Lean ground beef
    • 1 lg Onion (sliced wafer-thin)
    • 4 Carrots (sliced wafer-thin)
    • Potatoes (halved, sliced wafer-thin)
    • Ribs celery (sliced wafer-thin)
    • 1 c Boiling water
    • 2 t Beef extract OR bouillon
    • 2 Bay leaves
    • 1/4 t Dried thyme
    • Salt OR garlic salt to taste
    • Black Pepper to taste
    • 1/4 c Dry red wine – or tomato juice
    • 2 T All purpose flour
    1. Use melon baller and shape meat into tiny meatballs.
    2. Brown in skillet. Discard any fat.
    3. Stir onion into skillet and cook 1 min.
    4. Add boiling water or broth and extract or bouillon.
    5. Add remaining veggies, seasonings.
    6. Cover, cook over low heat, 15 mins until vegs are tender.
    7. Combine wine or water and flour in covered jar.
    8. Shake and stir into skillet.
    9. Cook and stir until sauce is thick, 4 mins

    Ingredients

    • 1 Package of Venison Hot Dogs
    • 1 Yellow Onion (Chopped)
    • 4 Scallion Stocks (diced)
    • 16 Hamburger Pickle Chips
    • ¼ cup Bottled Hickory or Spicy Barbecue Sauce
    • Ketchup (to taste)
    • Mayonnaise (to taste)
    • 4 Homemade Hoagie Style Split Hot Dog Buns (Sub similar rolls of your choice)

    Preparation and Cooking Instructions

    1. Heat grill to medium-high heat and oil cooking grates.
    2. Grill each venison hot dog, cut the yellow onion into slices cook, cook covered, 5 minutes.
    3. Turn; continue grilling, covered, 5 minutes, or until the venison hot dogs are heated through and the onion slices are cooked tender.
    4. Brush Orginal Flavor Bone Doctors' barbecue sauce over each venison hot dog and over the grilled onion.

    5. Arrange rolls, cut-sides, place face down, around edges of grill. Continue grilling, covered, 2 minutes, or until rolls are lightly toasted.
    6. Chop the grilled onion slices into small pieces.
    7. Chop Scallion stocks into pieces.
    8. Assemble and Serve grilled venison hot dog and vegetables in rolls. (see recipe photo)

    Sweet Homemade Cornbread

    Winter is the best time of the year for comfort food. In my opinion, one of the best comfort foods is cornbread.

    A moist flavor explosion in your mouth. Cornbread is also very versatile. It can be served hot out of the oven with butter, jelly, or best of all fresh honey. Cornbread goes with soup or stew. My all-time favorite way to have cornbread is with a fresh batch of Venison Chili. Yummy.

    • 1 cup all-purpose flour
    • 1 cup yellow cornmeal
    • 2/3 cup white sugar
    • 1 teaspoon salt
    • 3 1/2 teaspoons baking powder
    • 1 egg
    • 1 cup milk
    • 1/3 cup vegetable oil
    1. Preheat oven to 400 degrees F (200 degrees C).
    2. Spray or lightly grease an 8 or 9-inch glass baking dish.
    3. In a large bowl, combine flour, cornmeal, sugar, salt, and baking powder.
    4. Stir in egg, milk, and vegetable oil until well combined.
    5. Pour batter into prepared glass baking dish.
    6. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

    Serve immediately with your choice of favorite toppings, or after it is cool cover with plastic wrap and eat within a couple of days.

    • 1 bag tortilla chips

    1. Preheat oven to 350 degrees.

    3. Add ranch dressing, blue cheese dressing, ¾ bottle of Frank’s Red Hot sauce, and 1 cup of cheddar cheese.
    4. Mix thoroughly.
    5. Add more hot sauce if desired.
    6. Add wild turkey and mix again.
    7. Spread dip mixture into ungreased 8 x 8 casserole dish.
    8. Bake for 15 minutes, and then sprinkle remaining cheddar cheese on top.
    9. Return to oven for another 10 minutes.
    10. Let cool for 5 -10 minutes then serve warm with tortilla chips and/or celery.

    • Ingredients
    • 1 egg (lightly beaten)

    • 1 tablespoon prepared horseradish
    • 2 cups shredded peeled apples
