    Ingredients for Hearty Venison Stew

To create this delightful stew, gather the following ingredients:

    • 2 lbs venison stew meat, cut into 1-inch cubes
    • 3 tbsp olive oil
    • 1 large onion, diced
    • 3 cloves garlic, minced
    • 4 carrots, sliced
    • 4 medium potatoes, diced
    • 2 cups mushrooms, sliced
    • 2 cups beef or venison broth
    • 1 cup red wine (optional)
    • 2 tbsp tomato paste
    • 2 tsp dried thyme
    • 2 tsp dried rosemary
    • 1 bay leaf
    • Salt and pepper to taste
    • Fresh parsley for garnish

Cooking Instructions for Hearty Venison Stew

    1. Prepare the Venison:

      • Start by patting the venison stew meat dry with paper towels. This ensures a nice sear.
      • Season the meat with salt and pepper.

    2. Sear the Meat:

      • Heat 2 tbsp of olive oil in a Dutch oven over medium-high heat.
      • Add the venison in batches, ensuring not to overcrowd the pot. Sear until browned on all sides, about 5 minutes per batch. Remove the meat and set aside.

    3. Sauté the Aromatics:

      • In the same Dutch oven, add the remaining tablespoon of olive oil.
      • Add the diced onion and sauté for 3-4 minutes until soft and translucent.
      • Stir in the minced garlic, cooking for an additional minute until fragrant.

    4. Add Vegetables:

      • Toss in the sliced carrots and diced potatoes. Cook for about 5 minutes, stirring occasionally.
      • Add the sliced mushrooms and mix well.

    5. Build the Stew:

      • Return the seared venison to the pot. Add the tomato paste, dried thyme, dried rosemary, and bay leaf. Stir to combine.
      • Pour in the broth and red wine (if using), scraping the bottom of the pot to deglaze and incorporate any browned bits.

    6. Simmer to Perfection:

      • Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the venison is tender and flavors are well blended. Stir occasionally.

    7. Final Seasoning:

      • Taste the stew and adjust seasoning with additional salt and pepper as necessary. Remove the bay leaf before serving.

    8. Serve:

      • Ladle the hearty venison stew into bowls and garnish with fresh parsley. Enjoy with crusty bread for an unforgettable meal!

    Tips for Preparation and Serving

    • Marinate the Venison: For added flavor, consider marinating the venison in red wine, garlic, and herbs the night before.
    • Thickening the Stew: If you prefer a thicker stew, you can stir in a slurry made from cornstarch and water during the last 10 minutes of cooking.
    • Freezing and Reheating: This stew freezes well. Store in an airtight container for up to three months. Reheat it on the stove over low heat, adding a splash of broth if necessary.

    Recipe Notes

    • Meat Alternatives: If venison isn’t available, this recipe works wonderfully with beef, lamb, or even bison.
    • Vegetable Variations: Feel free to add or substitute vegetables like parsnips, sweet potatoes, or green beans depending on your preference and seasonal availability.
    • Herb Enhancements: Fresh herbs like thyme or rosemary can be used instead of dried, enhancing the flavor profile of your stew.

With this Hearty Venison Stew, you’ll create a comforting dish that’s perfect for those chilly nights. Gather your loved ones, serve up a hearty bowl, and let the warmth fill your home!
