Oven-Fried Squirrel

Ingredients
  

  • 1 squirrel cleaned
  • 4 eggs
  • ½ cup Fryin’ Magic® seasoned coating mix
  • ½ cup flour
  • 1/3 cup olive oil
  • 1/3 cup canola oil or vegetable oil
  • 2 tablespoons butter
  • 1 cup of chicken broth wine, or water

Instructions
 

  • Preheat oven to 375°F.
  • Pat meat dry with paper towel to remove any moisture.
  • Crack eggs into a shallow bowl and beat with a fork.
  • In another shallow bowl, combine Fryin’ Magic with flour and any desired spices.
  • Cover the bottom of a skillet with both oils and butter.
  • Dip the squirrel in egg mixture, then into flour mixture. Place in skillet.
  • Brown the meat well on all sides, about 20 minutes over medium heat.
  • Place squirrel in a baking dish. Deglaze the skillet with broth, scraping up any brown bits with a wooden spoon. Pour the contents of the skillet over the meat.
  • Bake for 1 hour at 375°F.
